Butter Chicken

Ingredients
- 1 1/2 cup Cashews
- 800g Chicken thigh or breast
- 1 Medium onion
- 5 Garlic cloves
- 30g Ginger (4m root)
- 600g Crushed tomatoes
- 2 Tablespoons brown sugar
- 1 Tablespoon garam masala
- 1 Teaspoon ground tumeric
- 1 Teaspoon ground coriander
- 1 Teaspoon ground cumin
- 1 Teaspoon ground chilli powder
- 4 Cardamon pods
Method
- Brown your chicken in a pot with some peanut oil, remove chicken after 10min
- While chicken is cooking add the cashews and 1 1/2 cups of water to a blender and blend until milk like
- Finely chop the onion and put in the same pot the chicken was in for 5min on a low heat
- Peel and grate the ginger and garlic, add to the pot and cook for 5min
- Remove the seeds from the cardamon pods and combine the seeds, all of the spices. and sugar in bowl - add to the pot, stir and cook for 1 minute
- Pour in the crushed tomatoes and simmer breifly
- Scrape the bottom of the pot and pour everything into a blender, blend until smooth
- Pour the blended curry and cashew back into the pot and add the chicken, simmer for a further 10min
- Serve with rice, crush some cashews, and add some coriander
