Quinoa and Eggs

Ingredients
- 2 Free range eggs
- 80g Spinach
- 1/2 cup quinoa
- 1/2 punnet cherry tomatoes
- Italian herbs / Mexican spice mix
Method
- In a pot combine 1 cup water + 1/2 cup quinoa, boil uncovered until all of the water has been absorbed. Remove from heat and let steam for a few minutes.
- While waiting for the quinoa to steam start frying your eggs
- Cut the cherry tomatoes in half and mix with the quinoa and half of the herbs / spice mix
- In a bowl place half the quinoa and pile it to one side filling the other sihde with spinach
- Place the egg on top and garnish with remain herbs / spice mix (optional add some paprika too)

You can use any bread but I tend to use sourdough
