Quinoa and Eggs

Quinoa and Eggs

Ingredients

  • 2 Free range eggs
  • 80g Spinach
  • 1/2 cup quinoa
  • 1/2 punnet cherry tomatoes
  • Italian herbs / Mexican spice mix

Method

  1. In a pot combine 1 cup water + 1/2 cup quinoa, boil uncovered until all of the water has been absorbed. Remove from heat and let steam for a few minutes.
  2. While waiting for the quinoa to steam start frying your eggs
  3. Cut the cherry tomatoes in half and mix with the quinoa and half of the herbs / spice mix
  4. In a bowl place half the quinoa and pile it to one side filling the other sihde with spinach
  5. Place the egg on top and garnish with remain herbs / spice mix (optional add some paprika too)

You can use any bread but I tend to use sourdough

You can finish the eggs off with the grill if you want

Place the egg on top and garnish with remain herbs / spice mix (optional add some paprika too)
