Smashed Avo

Ingredients

  • 2 Slices of sourdough
  • 1 Avocado
  • 50g Goats cheese
  • 1/2 Tomato

Method

  1. Pour some EVOO on to both sides of the sourdough, throw it into a pan for a few minutes each side until golden
  2. Pit and smash that avo, put in on the sourdough
  3. Sprinkle the goats cheese on top
  4. Thinly slice the tomato and place two half slices on top
  5. Season with salt and pepper, optionally splash some EVOO / oil from the cheese

You can use any bread but I tend to use sourdough
